Established as The Skamokawa Eagle in 1891
Walking down Main Street in Cathlamet you’ll notice there’s been a big change. The new Thyme Square Bistro, operated by Bradley House owner Audi Belcher, opened its doors on Monday.
The bistro includes a wide range of drinks and espresso, breakfast and lunch items with 95 percent of the menu consisting of whole foods. No items are fried, and all dairy products are free from growth hormones and antibiotics.
For Audi, the bistro is the last chapter of her career as she plans to retire in the next few years. As a former owner of three successful restaurants, she is keen to move forward, having spent the last four years recovering from an illness. The majority of wait staff are students home from college for the summer. Although they have little industry experience Audi has been impressed by their enthusiasm.
The bistro has been completely remodeled with a new floor, walls, painting, and furniture. Mr. Belcher was instrumental to the renovations, completing almost 90 percent of the work. The support of their landlords and particularly Wayne Cochran and Kevin Prestegard, made a huge difference.
Looking towards the future the bistro has many plans and is already working with the Tsuga Gallery, displaying local artists’ paintings on the bistro walls. This Sunday the bistro will be hosting their first brunch. The weekly brunch starts at 7 a.m. and finishes at 2 p.m. During the rest of the week, the bistro is open 7 a.m. to 3 p.m.
