WSU Wahkiakum County Extension will be hosting several classes in the coming months.

On Tuesday, February 12, volunteer chef Charlene Jeffers will be teaching how to make Skillet Meals. Skillet Meals are easy to make, good for you, and delicious. Often, they can be made with a few simple ingredients that are easy to find, and less expensive and lower in sodium and saturated fat than the pre-made frozen varieties. The class is free, and families and local residents of all ages are encouraged to attend. We will begin the class at 4 p.m. at the John Thomas Middle School Multi-Purpose Room.

On Monday, February 25, at 4 p.m., we will offer a cooking class featuring beans and rice. Volunteer chef JoAnn Prestegard will show us how to make a low-cost, tasty meal using these lean proteins and whole grains. This recipe will be good for your pocketbook and your heart, too!

If you’d like to attend either of these free, fun classes, please call the Extension office at 795-3278. RSVP isn’t required, but appreciated so that we are sure to have enough food for everyone to try a sample.

We will also be teaching about cooking greens and growing them yourself at the Community Garden in Cathlamet on March 25 at 4 p.m., with Carol Carver and George Exum, alongside our WSU Master Gardeners. All of these classes are sponsored by WSU Wahkiakum County Extension and Wahkiakum County Health and Human Services.

Finally, WSU Wahkiakum County Extension will be hosting WSU’s Women in Agriculture annual conference Saturday February 23 in Rosburg at Johnson Park, 8:30 a.m. to 3:30 p.m. We will hear experts from across the region sharing information and resources on farm management. These speakers will join us live over the internet, using the excellent high-speed internet connectivity at Johnson Park. We will also have speakers in person go over how to build working capital on your farm. The conference is targeted toward women in farming, but all are welcome to attend. The conference is free to attend, and lunch will be available for $8 at the door. RSVP’s are appreciated. We hope you can join us for any or all of these local, free opportunities.
